Wild Moose Burgers

*Preparation time : 25 minutes
*Cooking time : 10 minutes

 

Ingredients :

 

454 g (1 lb) moose meat
150 g (1/3 lb) pork belly fat
5 mL (1 tsp.) mushroom powder
5 mL (1 tsp.) finely chopped pickled wild garlic (recipe found on page 328 of this recipe book)
2.5 mL (1/2 tsp.) salt

1 egg
1 red onion, sliced
125 mL (1/2 cup) red wine vinegar
4 Boston lettuce leaves
8 slices spicy pickles
4 Kaiser burger buns


Preparation

Put moose meat and  pork fat together in a grinder with a small grid.
Add mushroom powder, wild garlic, salt and egg. Mix well.
Form 4 patties of about 150 gr (1/3 lb) each. Refrigerate.
Break up onion rings and place in a bowl with red wine vinegar. Set aside in the refrigerator.
Grill meatballs over a wood fire or on the barbecue for about 10 minutes.
Meanwhile, assemble  toppings and toast the buns.
Once meat is done cooking, place patties on the buns and top burgers to taste.
